As winter settles in, it’s time to warm up over classic wines that will provide joy and intrigue in equal measure. This collection was chosen for the colder months: reds with structure and presence for hearty cuisine, alongside a white that keeps things bright and reminds us that springtime is always just around the corner. Together they offer four distinct expressions of place, balance, and artisanal winemaking: wines that are immediately satisfying, yet become even more compelling as you spend time with them in the glass.

We begin with the 2023 La Chablisienne Chablis, a lively, modern expression of Chablis that is fresh, approachable, and extremely drinkable. Many growers have described 2023 as a “solar” year: initially concentrated and aromatic, with salinity and minerality that develops as the wine settles in bottle. This is not a cerebral vintage, and that’s part of its charm—what one producer called a “party wine,” built for pleasure. Pour it cool and watch it change as it warms in the glass: crisp and lifted at first, then rounder and more expressive as it comes toward room temperature. It’s a simple, fun way to experience how Chardonnay can shift minute by minute.

From there, we move to California with the 2023 Timbre Rare Groove Red Blend, from a generous vintage that produced wines of both ripeness and definition. We are continually excited and impressed with the harmony this vintage has yielded. This bottling contains a high percentage of Cabernet, giving it real structure, fine tannins, and a sense of polish that feels unusually complete for its youth. It’s elegant without being light, and firm without being severe, framed by dark fruit carried by shape and balance. Among recent Timbre reds, this stands out as one of the best we’ve released. It’s a harmonious representation of a vigorous harvest with a gentle winemaking touch.

We turn next to the 2021 Viniferia Cabernet Sauvignon, a more structured take on the coastal Italian spirit, built for versatility, but with a clear sense of backbone. The 2021 vintage is especially approachable, making this an easy bottle to reach for on a weeknight, yet still serious enough for a proper winter meal. Think depth without heaviness: a wine that holds its form on the palate and feels more complete with food, especially anything savory, roasted, or herb-driven. When you have a meal or a moment without an intuitive pairing, this is the bottle to reach for.

We close by saving the most special bottle for last: the 2020 Echo Roses Camille. The 2020 Bordeaux vintage marries grace and strength. This vintage delivered wines that are medium to full bodied with a compact core of fruit, a fresh lift on the palate, and tannins that feel polished. It’s a standout modern Bordeaux vintage: rich and balanced, and built to age without heavy extraction or loud oak. This classic Echo Roses Camille shows that character clearly. It’s robust and confident, well-shaped from start to finish, and it gains dimension as it opens over the course of an evening. And beyond the vintage, this bottling marks a milestone that is even more rare: the year the estate went fully kosher, becoming the only fully kosher estate winery in France. That’s an achievement worth raising a glass to.

This release is meant to keep you warm-spirited through winter while leaving room for brightness at the edges.
