On an exploratory trip through Napa Valley, I found myself in a cellar with a few notable winemakers, tasting through barrel samples of various Cabernet projects. Each barrel had a story, each vineyard its own micro-climate, and my palate was working hard to keep up, aided only by sparkling water and sips of pour-over coffee.
Amidst the tasting and spirited conversation, I heard a name mentioned that immediately pulled my focus—a familiar, nearly legendary name in Napa wine circles, one that I hadn’t heard in ages, kosher or otherwise.
“Wait—are we tasting those Spring Mountain barrels?” someone asked. My ears perked up.
An Exclusive and Secret Project
Spring Mountain? Cabernet? Kosher? This was a combination I had to explore further. The winemakers exchanged knowing glances and, after a beat, one quietly explained that an iconic, historic estate on Spring Mountain had been experimenting with a hidden project—Cabernet from some of the best blocks in their vineyards, crafted with meticulous care, but kept under wraps.
